The Shortbread Variations: Mother’s Day
Okay, I’m a little obsessed with shortbread. Don’t know why really, but possibly because of my Scottish ancestry and also it tastes so damn good. So maybe I’m projecting too much when I assume that my mother would like nothing better than this for Mother’s Day.She might prefer flowers, I suppose, or a pair of pumps from Manolo Blahnik, but I’m betting on this new version of Mike’s Shortbread. (I’m on this quest–okay, slightly weird–to develop several shortbread variations, just to keep things interesting.)
Try this: take the basic recipe and throw in 1/2 cup very finely chopped walnuts (or pecans), 1 teaspoon of grated orange set and 1 teaspoon of vanilla extract. Mix everything well and proceed with the recipe. Delicious, and Mom doesn’t need to know how easy it is.
What? Your mother doesn’t like shortbread? Go figure. Well, just make it for yourself. It’ll give you fortitude for shoe shopping….
